Maker`s description:

To’ak’s softest and most subtle expression of Ecuadorian dark chocolate is aged for three years in a single malt whisky cask from the famed Laphroaig distillery in Islay, one of the most iconic whiskies in the world. “It’s kind of dazzling...” writes Owen Dugan, a food critic with Wine Spectator and Cigar Aficionado.


Maker`s pairing recommendations:

Interestingly, this is arguably our most versatile chocolate for pairing. Laphroaig and other peaty Scotch single malts are obvious choices. Sweet fortified wines like Port and PX Sherry and sweet dessert wines like Sauternes also pair excellently with this chocolate. Even absinthe works well. Pairs excellently with a broad range of cheeses, including but certainly not limited to Gouda, Manchego, Brie, Crottin de chavicol, Comté, Pyrenees sheep milk cheese, and a broad range of goat cheeses.

Flavor profile: glorious dried figs covered with chocolate, creme caramel, clover honey, soft fruitness (pear), dried hops, almond praline, honeysuckle flower, heather flower, fir trees, complemented by peat-smoke notes, and savory seagrass that release all their strength and character towards the end. Interesting and unorthodox geranium persistent aftertaste (green, slightly peppery, lemony).


From this tasting experience on an imaginary trip that silently runs through Ecuador, To`ak frees your imagination, pleasing the palate with another Aged Chocolate example that gives off the many-faceted aspects of nature, from the more unexpected to the more delicate ones.
