Ingredients: cocoa mass, cane sugar, cocoa butter

This noble bean comes from the Swiss-Colombian family business Hacienda Betulia located in the north-western province of Antioquia, Colombia. Specifically, Criollo Betulia is grown from original local Colombian cacao trees, located in Maceo. No trees were imported or relocated. Kay Kausen (Taucherli Chocolate Founder) has worked directly with Christian Velez to realize this limited edition dark chocolate. The cacao grows under an agroforestry scheme on currently 15 hectares alongside 30 hectares of protected native forest. The Hacienda grows a selection of its own Criollo trees – known locally as “Betulia” – to propagate a collection of light-colored beans with rare and complex flavors. These beans are classified into three different categories: B6, B8, B9.

B8 and B9 beans are all 100% white, and this is a very rare characteristic because Criollo usually shows a purple/lilac color at 20-30% of the beans. B6 includes a few purple beans, but most are also shining with bright colors. The B9 clone shows a dynamic and powerful flavor profile ending with refreshing notes of ripe pineapple and exotic star fruit – expressing a rich bouquet of beautiful nuances over time.

About this limited edition, the white criollo bean turns the dark chocolate into optical milk chocolate. Isn't it amazing?

On the palate, it immediately delivers delicate gentle tasting notes particularly involved with the creamy mouthfeel and then unfolds peculiar bitter aspects as it follows: jasmine flower, mocha, pinewood, spicy predominant notes developed on the refreshingly sweet taste of peppermint latte. Continuing with Pineapple Juicy undertones, elderberry flower, “erba cedrina liquor”, moon drop grapes mouthwatering taste, magao pepper, and ginger. A dark chocolate bar with unmistakable personality closing with pine scents on the nose. It is simply on my top 3 when it comes to 80% bean-to-bar dark chocolate.
