DARK CHOCOLATE WITH CHARTREUSE
Ingredients: 65% min. toasted cocoa beans, cane sugar, 7% green Chartreuse (55 vol. distillate), sunflower oil, linen dietary fiber
Dark chocolate made with cocoa beans of the Trinitario and Criollo varieties certified organic. Roasting the cocoa beans at low temperature, stone grinding for at least 60 hours, and adding the Green Chartreuse. The chocolate obtained is left to rest for a few days, before having its final aspect.
The cocoa for this bar was sourced from Produits Des Iles SA (PISA), a central fermenter established in northern Haiti in 2012. PISA works with 1,104 small farmers – 492 of whom are women – to pay premium prices for the unprocessed cocoa harvest and then processing it centrally, allowing farmers to earn more money for their quality beans.
Chartreuse is a liqueur made by Carthusian monks in the mountains of southeastern France for more than 200 years from a secret blend of 130 herbs, seeds, and spices.

Flavor profile: caramelized sugar, juicy dark berries undertones, mild botanical punch, floral, oak wood, licorice, green pepper, baking spices, chamomille, honey, vanilla, fresh garden herbs, citrusy notes, and bay trees leaves as a subtle bitter combination of mint and spice in the background.
Sweet yet spicy, herbaceous yet refreshing, with a solid smooth finish, almost mentholated in its warming aftertaste. Mixing Green Chartreuse with dark chocolate escalates the sweeter tasting notes leaving a viscous palate-coating mouthfeel.
It is an unexpected inclusion with a wonderful yard of volatile flavors to amuse the more adventurous.
