The silk road - 70% dark chocolate with spices.
Ingredients: chuncho cacao beans, cane sugar, cocoa butter, spices (fennel, ginger, cassia, cardamom, rose, star anise, white pepper, long pepper, sichuan pepper, saffron, clove).
The spices used are the equivalent of the chinese garam masala. Of course with some addiction in it as saffron.
Chuncho belongs to the Alto Amazonas Forastero genetic group. It grows near the Urubamba river. It has a low acidity and astringency flavor profile followed by an extraordinary mild floral and exotic fruit aroma and fresh cream.
It also mimics the flavors of other fruits as:
soursop which tastes like strawberry/pineapple and a citrusy zest in contrast with with the coconut/banana aroma of its pulp;
custard apple which belong to the annona species (custard like taste);
the fruit of the ice cream tree: its flower develops into pod which contains black seeds and juicy white pulp with a vanilla ice cream flavor.
Now do you realize what we are talking about? This is nature pure gold!
I find here a nice snap. Warming and creamy texture. It` s mouth watering thanks to the spices inclusion. Different nuances on both sides.
On the front side rich spiced chocolate, exotic fruits and caramelized nuts.
On the back side it is more floral with less chocolate pungent tone but wait to reach each small rose petals. Pure magic!
It starts with chocolate and fennel aroma followed by the sweet tropical fruits taste. Short chocolate finish but long lasting peppery ginger effect on the tip of your tongue with some star anise and rose notes dancing all over your palate.
I asked to Elfi and Maxime if they were inspired by Chincha Morada (non alcoholic peruvian drink made from purple corn, pineapple, spices) or picarones (peruvian donuts made of sweet potato, pumpkin, cinnamon, cloves, anise seeds). But no. It`s because a best friend.
