We are proud to offer high-quality cocoa beans selected from independent producers all around the world. Our cocoa is roasted, winnowed, ground, conched, aged, tempered, moulded and hand-wrapped at our workshop in Mont-Tremblant.
It is one of the most aromatic bars I have ever tried. When I purchased it I was not aware of the balsam fir powder. Indeed, I just learned about its existence. You are probably wondering the reason I selected this product. Well, the name sounded interesting and "different" and I wanted to find out why!
Good snap. Amazing mouthfeels, smooth and creamy at the same time.
Sweet balsam resin taste combined with figs and caramel chocolate notes. It is not so bitter as I expected but sweet and refreshing on the palate. I detect a combination of floral and woody notes like roses, honeysuckle, and sandalwood evolved on a pine-like background. The finish is woody, floral, and refreshing like sweet menthol candy showcasing a bitter herbal persistent aftertaste. A coolish-dense-astringent sensation on the bottom of the throat (mint buttercream), pinewood pungent mouthwatering touch on the tip of the tongue.
