Dark chocolate with spices

Domantas Uzpalis, Chocolatier

Wild or all-natural farming ingredients: specialty cacao, sugar, cacao butter, 5% cinnamon, 2% ancho chile, 1% clove, 1% vanilla.

This bar is part of the Naive Equator Collection where the concept is to use ingredients that come from a single ecosystem. Every chocolate bar is solely composed of elements grown in the area the region of the earth surrounding the Equator with bright and intense flavors symbiotically blended into the house-made tropical chocolate.

This chocolate is handcrafted with organic specialty cacao, which is mixed in a certain proportion to form a clean, rich, and flavorful base. The blend formulation is classified, but Domantas assures it is the top quality and it fits perfectly with Naive standards and values.

Let me ask you, would you like to get lost in a spice island full of meandering rivers, marshland, and rocky volcano slopes? Imagine rowing through thick mangroves and mysterious swamps while listening to chirping insects. Bright flowers blossom and old cinnamon trees wave at you with their woody hands. The air is fresh with a vanilla smell and grey fluffy clouds drift over your heads.

Multilayered bar providing complex rheological information. It is sweet, strong, delicate, and temperamental at the same time, and it illustrates the colorful abundance of the tropics. The winning combination of real Ceylon cinnamon and sweet cloves together with Bourbon vanilla caviar and a touch of ancho chile will excite your senses.

The bar can be enjoyed as Mayan style hot beverage by grating it and emulsifying it with hot water with a ratio of 40% chocolate to 60% of water. This sipping chocolate goes great with choux-style pastries, like eclairs, churros, or profiteroles, or it can be served with vanilla ice cream and a glass of rum too.

Flavor spectrum in order of predominance: woody, tobacco, leathery, citrusy.

Flavor notes: rollercoaster style flavor development. An initial punch of Ceylan cinnamon and cloves is followed by sweet vanilla, and then a few seconds later the warming and smoky sharpness of ancho pepper come through.

Flavor profile: a dark chocolate bar with "endearing personality", beautifully spiced with profuse cinnamon, and vanilla lush-tropical flavors escorted by delightful honey undertones, and pleasingly matched with the hot fiery effect of ancho chili resembling on the palate cayenne pepper that delivers, during the tasting experience, pungent-earthy bites. The aftertaste remains in my memory with the most plaintive and... poignant clove mouthfeel: sweet, bitter with an undeniable warmth and a bit of astringency, very similar to nutmeg.

Ceylon cinnamon, vanilla caviar, and ancho chile are the features that create an intense connection with the chocolate base while providing a framework that enhances subtle inmates' layers (clove and honey) of the specialty cacao blend to a maximum.

To me, Naive with this creation sends us a chocolate massage touchingly intense as anything written with a pen which was also a feather.

Thank you Domantas for gifting me this delicious sample.
