Origin: Papua New Guinea
Notes: Smoke, Honey, Nutmeg, Salt
Cocoa bean family: Criollo and Trinitario
Ingredients: Cocoa beans, unrefined cane sugar, cocoa butter
This is Mirzam`s deepest darkest tasting chocolate bar, with strong smokey flavor notes picked up during the drying process, when fermented beans are spread over raised trays with hot smoking coals underneath. The smoke generated to dry the beans infuses the cocoa butter and can be tasted in the finished bar.
Shiny and homogeneous on the surface
Brown color *****
Aroma: smoked honey, spices
Mouthfeel: warm with refreshing honey accents
Flavor profile: smoked honey, nutmeg, salt, delicious and creamy drinking milk chocolate in the background, sweet and spicy cherry plum undertones delivering a bright hint of tartness and a clean-crispy aftertaste. Burnt "candy" back taste perfectly matched with a touch of astringency and complex leathery sensations.
Besides the peculiar yet well-balanced smokiness, I find this bar very hard to put down due to the synergic action of "chocolate milk" and the fruitness. Nice!
Values expressed in stars from 1 to 8. If the bar is extraordinarily close to perfection, I can go up to 10.
