Bocas del Toro is a land formed by an archipelago, off the Caribbean coast, famous for its tropical forest. Discovered in 1502 during Christopher Columbus' fourth voyage, cocoa is harvested there by small farmers from the NgöbeBuglé* indigenous community. Cocoa trees thrive among laurels, peaches, and banana trees in a varied agroforestry system.
Interesting bar with a crunchy texture. I like the contrast of flavors and aromas. The rich bitterness counteracts the nougatine flavor. This gourmet recipe is very tasty on both counts, look and palate, but, personally, the sweetness coming from the glucose is too strong.
I noticed a hint of stale nutty taste which is very normal for some sort of inclusion. Talking about a personal experience, this is the kind of bar with a short shelf life. So I recommend enjoying it freshly-made and in 6 months from the purchase.
*The Comarca Ngobe-Bugle is an indigenous reserve in Panama which is home to the Ngobe tribe (also known as the Guaymi) and the Bugle tribe. The two tribes are related to each other but have distinct cultures and speak different languages.
