São Tomé and Príncipe is located on the western equatorial coast of Africa. The former Portuguese colony, the country has a terrible cast of slavery. Now one of the most stable democracies in Africa, São Tomé has some of the most unique soil and climate conditions for cacao but remains extremely poor. Satocao was established in 2015 as a certified organic co-op of over 400 farmers from 7 communities. For the first time, this amazing cacao has been brought to the US and made into chocolate that Letterpress Chocolate Maker hopes we enjoy!

Texture: resinous, the finish is amazing, the chocolate bite vanishes like a glass of water!

Flavor profile: after the quick caramel-like upfront sensation, a burst of oak wood and peanut skin secerning resiny sophistication explode in the mouth fleshed out with wild berries juiciness (bilberry, blackcurrant, blackberry, fraises de bois undertones, and swift of red currant tanginess), and moon drop grapes.
The dry-astringent long-lasting aftertaste is in tune with the main exhibitions of flavors. The mouthfeel is quite peculiar and caresses the palate at length leaving behind memories of earth and unidentifiable sweetness.
With this bar, Letterpress Chocolate achieved a dynamic palate, full of material consistency, and proper tension harmonizing the tasting path.
In my opinion, the description "Peanut buttercup" is dramatically reductive.
