This bar is part of the Grown-Up Chocolate Box of The Chocolate Bar NZ made in a limited edition in collaboration with the finest craft chocolate makers, brewers, distillers, and winemakers in New Zealand. Each box contains four bars of world-class craft chocolate that have been created in batches of just 250 bars each. All four bars are infused with some of New Zealand’s tastiest tipples, including Behemoth Brewing stout, Thomson Whisky, Stolen rum, and The Hunting Lodge wine (the ABV of each bar is less than 0.5%).

In this case, Piña Colada - the national drink of Puerto Rico - is combined with a rich 72% dark chocolate, made with the finest Arriba cacao from Hacienda Victoria in Ecuador. After roasting the beans, Karl Hogarth soaked the cacao nibs in Stolen Dark Rum for several days, before dehydrating them and grinding them together with organic Brazilian sugar. Then he sprinkled on the back with desiccated coconut, dried pineapple, and a glacé cherry.

The Stolen Dark Rum "reimagines the classic, traditionally heavy, naval style dark rums, with a more modern and smoother interpretation. It’s blended by hand and uses Demerara caramel for a full-bodied look and flavor, lightly toasted sweet caramel aromas and a soft honeyed texture in the mouth".

Flavor profile: a first caress on the palate of chocolate and lightly toasted caramel continuously knotted by subtle coconut undertones. The dark rum strong presence walks out slowly before going on to invade the scene expressing a robust burnt smoky caramel sauce matched with charred oak mouthfeel, and softened by a "nectarous" finish.

The full-bodied, well-balanced round flavor is as convincing as the particularly long-lasting aftertaste and the ostentatious sweetness of the glacé cherry and the dried pineapple.

Indeed, I love the satisfying fruit bites scattered on the back of the bar but I would have preferred more glacé cherries.

Even though I do not favor this maker for the texture of their bars, I have to admit this is an inclusion of the utmost character. Hogarth went through juicy oscillations of flavors, with euphoric sweet upswings and dramatic bitter turndowns. Not extremely complex but surely satisfying.
