GEORGIA RAMON CHOCOLATE NEW CRAZY RELEASES
INDIEN CACAO-LASSI 47%: Indian cocoa beans meet yogurt!
Organic ingredients: cocoa butter, raw cane sugar, cocoa mass, 18% yogurt powder, whole milk powder
Aroma profile: milky and creamy with a fresh, slightly sweet note
"Lassi" is the name of an Indian yogurt drink. More properly, it is a sweetened, chilled chocolate beverage made with thick curd or yogurt, cocoa powder, and sugar. It occurs in different variants in the Asian and Eastern European regions.
This bar is surprisingly good with a sharp snap and a nice melt: milk chocolate infused with tangy yogurt notes releasing coconut flavor that turns into an unforeseen smoked maple finish on the palate. Sensual, gourmand, unpredictable, elusive.
STRAWBERRY & YOGURT:
Organic ingredients: cocoa butter, raw cane sugar, 13% dried strawberries, 13% yogurt powder, whole milk powder, acidulants: citric acid, emulsifier: organic sunflower lecithin
Organic white chocolate made with cocoa butter from the Dominican Republic, fruity strawberries, and refreshing yogurt.
The bar looks bright and it presents a nice snap. On the nose, it emanates a strawberry and cream candle fragrance. On the palate, the strawberry flavor is genuinely staggering just like "coulis di fragole" freshly made and cooled. The taste is reminiscent of "strawberries and yogurt parfait". The sound of it may seem easy but at the same time spectacular.
SEA BUCKTHORN & YOGURT:
Organic ingredients: cocoa butter, raw cane sugar, 16% yogurt powder, whole milk powder, 10% sea buckthorn powder (sea buckthorn pulp, rice flour), emulsifier: organic sunflower lecithin
Organic white chocolate is made with cocoa butter from the Dominican Republic, aromatic and fruity sea buckthorn, and refreshing yogurt.
The bar presents an inviting look, a simple but decided mild orange color favoring the white nuances of the yogurt and milk inclusions. In this case, the mouthfeel is not my favorite but however interesting for those who enjoy having fun during their tasting. The fruitness is milder in terms of sweetness and acidity with the main sensorial effect in taste driven by yogurt and milk until the berry part shows up with what I can define as a mix of sour-orange and mango savors. What puzzles me is the musty sour tang over this playful creation.
Thank you so much to Phillip Butzmann to let me discover the great newness of their CHOCI selection.
