Coopoam is a cooperative from the state of Para`, east of the Amazon, which has joined forces with five other cooperatives to form the Cooperativa Central De Produ çâo Orgânica Na Transamazonica E Xingu - CEPOTX. A total of 95 farms and 150 producer families grow on 1.125 hectares organic and fairtrade certified cocoa.
As soon as I tasted Georgia Ramon Brazilian 73% I was ecstatic by the beauty of the packaging, the complexity of the flavors, and the dynamic finish that stands out
Dark brown color. Nice snap. Creamy yet slightly coarse texture. The aroma differs greatly from the palate: tempting chocolatey scents enriched by vanilla powdered sugar. The tropical fruitiness is what arises from the wrap.
Since the first bite, the red berries will confirm their undoubted presence among the other flavors. And with the honey caramelized pineapple undertone is what struck me the most.
As always GR showcases a very "natural" sweet flavor profile instead of heavily sugared chocolate. A light touch of bitterness. Not relevant astringency.
The finish/aftertaste represents something to discover and to learn. It might be rum or tangy-pungent pineapple or tart red fruit. However, the mouthfeel effects delight the eye and warm the heart of every gourmet.
