TEA CHOCOLATE MADE IN COLLABORATION WITH RARE TEA CURATOR - PEKOE & IMP
International Chocolate Awards ASIA-PACIFIC SILVER 2019
Ingredients: cacao beans, Cane Sugar, Natural Cacao Butter, Milk Powder, Tea Leaves.
Flavor profile: floral fragrance layered with notes of longan and malt.
Ya Shi Xiang (literally translated to Duck Shit) is a dancong tea cultivated in the Phoenix Mountain of Guangdong Province. The story goes that the farmer, in an attempt to hide the secret to his delicious tea, gave it an unpleasant name and it stuck. Fortunately, the flavor is nothing like its name. This 2018 Spring lot has notes of longan and malt with a long floral finish.
This is the only Fossa special Tea Inclusion bar I did not enjoy.
I find the tea/tannin taste very strong overcoming the milk sweet touch. Bitter malt finish.
For me, it has been impossible to find any evidence of tropical longan fruit notes or floral impression. I think this bar is perfect for beer geeks though.
