Bi Tan Piao Xue is a traditional tea from Emei Mountain in the Sichuan Province. Made using top-grade green tea harvested in Spring, layered with the best Jasmine flowers that bloom in Summer, it is an elegant tea that befits the name.
Our preparation with the floral and mildly fruity Indonesian cacao makes chocolate that has a depth of flavor with lingering umami and jasmine fragrance.
Let me state straight away that I am not a tea lover but I appreciate it as an inclusion with chocolate. Indeed, Fossa and their special Tea Chocolate Selection allow me to discover all these rare superior qualities tea varieties on the planet.
I did my research and briefly, Bi Tan Piao Xue is also known in English as Snow Drop Jasmine tea, which is produced in Sichuan a mainland province in the Xinan Tea Region of China. The green tea leaves sink to the bottom with white jasmine blossoms floating on the surface. In this way, the tea leaves fully absorb the jasmine fragrance developing a sweet and jasmine aroma fresh taste.
Soft snap. Jasmine intense and springy aroma. Creamy texture. Now it is not easy to explain clearly the flavor profile of a bar in a few words. But in this case, I assure you a chocolatey version of Honeysuckle taste. Delicate, pleasant persistent floral mouthfeel that makes me think of my childhood when I used to "drink" their nectar!
Side note, it is not very complex in the sense of the evolution of flavors with no evidence of fruitness. I still recommend it. Not only, with the Qantu Chaska Dark 70% (no inclusions), it represents the best bar with floral tasting notes I have ever tried.
