In recent discoveries, Nicaragua has been found to be one of the few countries where Criollo varieties of cacao originated. These unique genetics along with meticulous, post-harvest processing is transforming Nicaragua into a hotbed for the world`s finest flavored cacao. Castronovo Chocolate carefully chose the Nicalizo heirloom cacao variety for the Signature Collection. They are enamored with their flavor complexity. The chocolate has fruity notes such as plum, cherry with rich buttery flavors of roasted coffee, a little spice of pink peppercorn, and a lovely roasted walnut long-lasting finish. This truly is a bar of special chocolate.

Flavor profile: dried plums, candied cherry, rich buttery flavors of "riduzione al caffe con zucchero di canna". In the background, I have noticed crystalized grape sugar and an extra touch of "miele al limone" befitting the walnut's long-lasting finish-aftertaste.

The flavor profile is intense and particularly "dark": especially in the back taste, the feeling you experience is similar to extra dark chocolate with 75% and a bit more cacao content. I have fallen for some aspects such as the buttery mid-palate, grape sugar, and honey lemon for which it goes my recommendation.
